I have a long standing tradition of staying up when the family is sleeping to cook chocolate chip pancakes and bacon. That way when we all wake up (one of us is groggy from staying up late having adult beverages) I just have to whip up some eggs to order. I highly recommend it bacon and pancakes hold really well in the fridge so long as you cool them down before you put them away.

Belgian waffles hold up real well too. It’s my go to Saturday / Sunday breakfast item.

As a southerner, I make country ham, biscuits, eggs, and grits while watching the f1 race.

I do want a waffle machine but I have every other damn kitchen toy in the world and about 3 years ago I put a stop to my madness. If I don’t own it now sadly I likely won’t for a long while. When I moved a couple years back I tossed so many kitchen items that’s when I realized I had a problem:)

But it’s better unlike the sad excuse called “southern country ham”, that is shit rolled in sugar. Peameal is soaked in a brine, then rolled in cornmeal.

You sir have zero idea what what your speaking of.. Country ham has no sugar. Per wiki just so you know what your knocking.. “Country hams are salt-cured for one to three months. They may be hardwood (usually hickory and Red Oak ) smoked , then aged for several months to 2–3 years, depending on the fat content of the meat. [3] Country hams are not fully cooked, but preserved by the cure.”
I can promise you it is delicious as is yours but "shit rolled in sugar" it is not. As a previous western ny’er who loved to spend time in Canada I’m not just talking out my ass.

Amazon sells some nice waffle machines for like $30. So worth it to make waffles whenever I want. It's my go to lazy food since the "just add water" pancake mix comes out soooo good as a waffle.
